Vinification
Manual harvest to the box, with optimum ripeness criteria since the sharp altitude is decisive at this stage. Alcoholic fermentation in stainless steel tanks with controlled temperature at 16-18 ° C. Second fermentation carried out in a bottle according to the champagne method, followed by a minimum stage of 9 months in the bottle.
Tasting Notes
Blanc Noir presents a citrus color of floral aroma. In the mouth has a fresh and elegant attack, has a very fine and persistent bubble.
The palate reveals light and complex flavors of wild fruits and a pleasant balance of very balanced acidity. A persistent, well-integrated mousse.
Alcohol –12.5 % vol.
Gastronomy
Great for starters, salads, light grills and fish. Perfect to accompany appetizers and seafood. It is also one of the few that perfectly match with sushi.
